Definition

Gelatin is a flavorless gelling agent made of various proteins and peptides. It is derived from connective tissue, skin, and bones of animals or fish and is available in sheet, granule, or powder form.

Health considerations

Gelatin is a source of complete protein. There is some evidence for gelatin consumption being of therapeutic use in treatment of osteoarthritis and osteoporosis.

Individuals who avoid meat or are allergic to cow, chicken, pig, possibly horse, or fish should avoid this product.
