Gellan gum is a thickener, emulsifier, and stabilizer produced by Pseudomonas elodea bacteria.

Health considerations

At the levels present in food gellan gum is not associated with any adverse effects. When consumed in large quantities it can cause bloating, gas, and have a laxative effect.
