Definition

Molasses is a sweet syrup made from boiling sugar cane juice. The second boiling is referred to as molasses.

Health considerations

Molasses contains trace amounts of some vitamins and has some mineral content. It contributes some iron, magnesium, and calcium. It is primarily sugar. Its sugar content is 53% sucrose, 21% glucose, and 23% fructose. Molasses may contain added sulphur, with sulphur dioxide used to lighten colour and extend shelf-life. The term “unsulphured” will denote those without added sulphur dioxide.

Keep in mind

While containing some vitamins and minerals molasses is nonetheless a sweetener and primarily sugar.
