Definition

Teff is the tiny, gluten-free grain of the Eragostis tef grass. Teff cooks more quickly than many other whole grains due to its size and has a sweet, malty flavor.

Health considerations

Teff is a source of iron, magnesium phosphorus, magnesium, copper, zinc, clcium potassium, and B vitamins. Teff is 8% fiber, 13% protein.
