Definition

Soy lecithin is a soy-derived lecithin, a lecithin being an oily substance found in animal- and plant-based foods. The main purpose of soy lecithin as an additive is to act as an emulsifier, preventing separation of fats and water, and to improve texture. 

Health considerations

Though a refined product, soy lecithin may contain traces of allergenic soy protein.
