Definition

Sorbitan tristearate is an emulsifier and stabilizer made from sorbitol esters and stearic acid. It is used particularly in chocolates to maintain colour and shine and prevent blooming, and in margarine and cooking oils to maintain appealing texture.

Health considerations

At the levels expected with normal consumption, no negative effects have been attributed to sorbitan tristearate.
