Definition

Ghee is a type of clarified butter made via simmering butter and removing the milk fat solids. It is similar to the French beurre noisette.

Health considerations

Ghee contains more calories than butter as it is pure fat, whereas butter has a water and trace protein content. It is a source of total fat, naturally occurring trans fats, saturated fat, vitamins E and A, and cholesterol.

Keep in mind

Vegetable ghee, a common low-cost alternative, is made from partially hydrogenated oil and may contain trans fats.
