Dutch process cocoa is cocoa powder that has been treated with an alkalizing agent. This produces a darker cocoa with a milder flavor, lower acidity, and greater ability to mix into liquids.

Keep in mind

Dutch process cocoa cannot be used in recipes leavened with baking soda, unless an acid is added.
