Definition

Citric acid is a weak organic acid found in many vegetables and fruit, particularly citrus fruit. This acid is also produced in humans naturally during the citric acid cycle for energy production. It is used as an acidity regulator, as flavoring, as an emulsifier to keep fats from separating, and with sodium bicarbonate to create fizziness.

Health considerations

Ingestion of citrus fruits such as lemons may help lower high blood pressure.
