Glutinous rice is any cultivar of rice that, when cooked, becomes sticky. Glutinous rice is a staple in many Asian cuisines.

Health considerations

Glutinous rice may be milled, producing a white rice, or remain unmilled, as in the purple and black glutinous rice cultivars. Unmilled rice contains the bran, which is a source of fiber and micronutrients.

Keep in mind

Glutinous rice does not contain gluten. Glutinous refers to the glue-like stickiness of the cooked grains.
