Definition

Nutritional yeast is a yellow, deactivated yeast that is used as a nutritional supplement and condiment, particularly in vegan cooking. It has a nutty, cheesy flavour; its glutamic acid content lends it a similar flavour to parmesan. Nutritional yeast is commonly sold in fine flakes but is also available as a powder, and can be found in most bulk foods stores and many grocery stores.

Health considerations

Nutritional yeast contains all essential amino acids and is an excellent source of B vitamins, excepting vitamin B12. Many commercial nutritional yeast brands fortify their product with vitamin B12. Nutritional yeast is low in fat, high in protein, and a source of fiber and iron.
