Definition

Lime refers to a variety of small, sour citrus fruit typically with a green rind. The most common species is the Persian lime, though other popular limes include the key lime and kaffir lime.

Health considerations

Limes are a source of vitamin C. When one’s skin is covered in lime juice then exposed to sunlight, phytophotodermatitis may occur, causing a reaction similar to a sunburn.

Keep in mind

Different lime species have varying levels of bitterness, acidity, and sourness.
