Lentils, Le Puy

Definition

Le Puy lentils are a dark green to black cultivar of lentils of the Lens esculenta puyensis variety. Le Puy lentils are common in French cuisine and have protected designation of origin. In the European Union only lentils from the Le Puy region of France may carry the name.
