Dutch process cocoa is cocoa powder that has been treated with an alkalizing agent. This produces a darker cocoa with a milder flavor, lower acidity, and greater ability to mix into liquids.
The Dutch process reduces the antioxidant quantity in the cocoa powder. See: cocoa powder
Dutch process cocoa cannot be used in recipes leavened with baking soda, unless an acid is added.
