Definition

Cashew nuts are among the lowest calorie nuts, as they contain more starch by weight than others. As a source of fat, however, cashew nuts contain 54% monounsaturated fats, 18% polyunsaturated fats, and 16% saturated fats. They are also a source of antioxidants, vitamins, and minerals such as copper. Cashews may lead to kidney stone formation in susceptible persons due to their content of oxalates.

Health considerations

Cashew nuts are considered tree nuts and thus should be avoided by those with tree nut allergies, unless otherwise indicated.
