Definition

Iota carrageenan is a type of carrageenan derived from Eucheuma denticulatum seaweed. It is used as a thickening or gelling agent. Gels made with this are soft, flexible, clear, and freeze and thaw stable. It is used artisanally in modernist cuisine to create hot foams and creamy custards and jellies.
