Calcium benzoate is a calcium salt of benzoic acid used as a preservative in acidic foods to prevent growth of bacteria and fungi.

Health considerations

Calcium benzoate is considered generally safe at levels present in food. When present with ascorbic acid, calcium benzoate may react to form benzene. See: Benzene
