Definition

Raw cacao is essentially unroasted cocoa powder. It is made by cold-pressing unroasted cocoa beans to remove the cocoa butter component. Raw cacao has a different, richer flavor compared to roasted cocoa but can be used in similar applications.

Health considerations

Raw cacao contains antioxidants, vitamins, and minerals, particularly iron and magnesium. Depending on brand, it may be high or low in fat. Some research suggests that raw cacao has a higher antioxidant content than roasted cocoa products, and suggest benefits to live enzymes in the cacao that have not been denatured by heat treatment.
