Definition

Bonito is the name for a large predatory fish related to tuna and mackerel. Bonito and bonito extract as an ingredient typically refers to bonito flakes, or katsuobushi. Katsuobushi is traditionally made from dried, fermented, and smoked skipjack tuna, but the less costly bonito may be used.

Health considerations

Bonito proteins have been seen to have anti-hypertensive effects, lowering blood pressure both in individuals with high and normal blood pressure.

Keep in mind

Bonito is not acceptable for individuals with fish allergies or vegans and non-pescatarian vegetarians.
