Definition

Tofu is the pressed, coagulated protein of soy milk, also known as bean curd. It can be sold fresh or packaged, and pressed to a variety of textures including silken, medium-firm, firm, and extra-firm. Tofu can be prepared in a variety of ways including grilled, stir-fried, fried, and plain.

Health considerations

Tofu is a source of protein, iron, and, being minimally processed, shares many of the properties of soybeans. See: soy Tofu intake has been associated with reduced risk of stomach cancer. Different coagulants impart varying levels of particular minerals, such as high calcium content when calcium chloride or calcium sulfate is used.
