Definition

Chia, otherwise known as Salvia hispanica, is a flowering plant responsible for producing chia seeds. These seeds are very rich in omega-3 fatty acids and are used in various recipes for their nutritional benefits as well as for their ability to create a gel-like consistency in liquids.

Health considerations

Dietary chia seed intake has shown to decrease fat storage, insulin resistance and normalize circulating fatty acid levels in the blood. Thus, this food may be beneficial to those with type 2 diabetes who are looking to increase their insulin sensitivity, and those looking to lose weight.

Keep in mind

This seed can absorb up to 12 times its weight in water, producing an interesting gel-like quality.
