Definition

Carthamus yellow is a natural yellow food dye derived from the petals of dried safflower flowers treated with an alkaline solution.

Health considerations

Carthamus yellow is considered generally safe at levels present in food. In studies of rats fed high levels of carthamus yellow over six months, no toxic effects were seen. In another, the liver of the rats tinted yellow, though function was not impaired.
